banana nut muffin deliciousness
and did i mention they are eggless?
never did i know how easy it was to bake bread loafs. well, you are probably like but wait “this says muffins”. correct. rather than throwing the mix into a bread loaf plan, to make sharing easier, I just throw the mix into a muffin pan and say “voila!”. presto.
i conjoured up this batch for our special nurses at work in honor of national nurses week. they are the best and we love them so i just wanted to make sure that they knew that. knowing that i would get in trouble if I didn’t make enough for my other co-workers, i made a plentiful amount and i honestly prefer to make this recipe eggless, so I did. :-)
Ingredients
2 Cups of Flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup of butter
3/4 cup of brown sugar
3 overriped bananas (or more)
1/2 cup of walnuts (optional)
2/3 cup of applesauce (egg substitute! or you can use 2 eggs…but i think the applesauce makes it more moist and tasty)
1/2 teaspoon cinnamon (optional)
Directions
1) Preheat oven to 350.
2) Mix together dry ingredients in a bowl
3) Mash bananas and add to butter and applesauce
4) Mix together wet and dry ingredients and then add walnuts
5) Mix well and then poor into pan
6) Bake 30-35 minutes
— Check back every 10 or so minutes and stick with a toothpick until it comes out clean.
